Molten Matcha Cake

Green molten lava? Oooooh yeah. *Let it floooow, let it floooow*

Note: This type of volcano will not harm you; the most it can do is to have its lava burn your tongue if you can’t resist cooling it before you dive right in. I know, I know. It’s tempting, alright.

Ingredients

  • 2/3 cup white chocolate chunks
  • 2 tbsp matcha powder
  • 6 tbsp unsalted butter, melted
  • 3/4 cup confectioners sugar
  • 2 eggs
  • 7 tbsp flour
  • extra confectioners sugar for dusting

Directions

  1. Brush glass ramekins with some melted butter. Place them on a baking tray. Set aside.
  2. Preheat oven to 420F.
  3. Melt white chocolate chunks in a bowl set on top of a pot of simmering water under low-medium heat.
  4. Add matcha powder and mix until smooth and well combined.
  5. Turn off heat. Slowly stir in melted butter. Keep mixing until well combined.
  6. Remove bowl from heat. Sift in icing sugar in 1/4 cup portions while mixing slowly and consistently.
  7. Add eggs one at a time, mixing well after each addition until a thick consistency is created.
  8. Stir in flour in 1/4 cup portions while mixing consistently until well combined.
  9. Scoop and portion batter into the four ramekins.
  10. Bake for 9-10 minutes until outer edges are golden brown and center is still jiggly and “molten”.
  11. Use a butter knife to cut around edges of each cake. Invert and transfer cake to a clean plate.
  12. Dust cake with confectioners sugar.
  13. Enjoy!
